  1. Begin by melting the butter in a large pot over medium heat. Add the diced onions and carrots, and cook until softened, approximately 5 minutes. Then, add the garlic and cook for an additional minute.
  2. Stir in the flour and cook for about 2 minutes until it starts to take on a golden hue.
  3. Slowly incorporate the chicken broth and half and half into the mixture, stirring continuously. Be cautious not to add them too quickly to prevent the roux from breaking.
  4. Add thyme
  5. If using raw chicken, include it in the broth and bring it to a gentle boil. Simmer until the chicken is fully cooked, roughly 10 minutes depending on its thickness.
  6. Take out the chicken, let it sit for 5 minutes, dice it, and return it to the soup. Allow the soup to simmer until it reaches your preferred thickness as it will continue to thicken.
  7. Add the gnocchi and simmer for approximately 5 minutes, following the package instructions for precise timing.
  8. Lower the heat and mix in the spinach, red pepper flakes if you'd like, then salt, and pepper to taste. Simmer until the spinach wilts, which should take about 1 minute. Your delicious soup is now ready to be served!
