Instructions
- Begin by melting the butter in a large pot over medium heat. Add the diced onions and carrots, and cook until softened, approximately 5 minutes. Then, add the garlic and cook for an additional minute.
- Stir in the flour and cook for about 2 minutes until it starts to take on a golden hue.
- Slowly incorporate the chicken broth and half and half into the mixture, stirring continuously. Be cautious not to add them too quickly to prevent the roux from breaking.
- Add thyme
- If using raw chicken, include it in the broth and bring it to a gentle boil. Simmer until the chicken is fully cooked, roughly 10 minutes depending on its thickness.
- Take out the chicken, let it sit for 5 minutes, dice it, and return it to the soup. Allow the soup to simmer until it reaches your preferred thickness as it will continue to thicken.
- Add the gnocchi and simmer for approximately 5 minutes, following the package instructions for precise timing.
- Lower the heat and mix in the spinach, red pepper flakes if you'd like, then salt, and pepper to taste. Simmer until the spinach wilts, which should take about 1 minute. Your delicious soup is now ready to be served!
